Rick is co-the author of Nutrition Guide for Clinicians, the first handbook for medical students designed to help future physicians integrate knowledge of advances in nutrition information into medical practice.
Rick is also the author of The New Cancer Fighters: How Phytochemicals Work (University of California Press, publication pending). The New Cancer Fighters is the first book to explain the effects of dietary patterns and phytochemicals on cancer cell growth mechanisms, and features interviews with cancer scientists from all over the world.
As a pioneer of advancing psychology into nutrition therapy, Rick also authored the Continuing Professional Education manual entitled The Psychology of Weight Control in 1997, with a 2nd Edition published due to popular demand in 2002.
Rick has lectured extensively to audiences on several health-related topics, with clients that include the Miami-Dade Police Dept., Florida Light and Power, XEROX, Broward County (FL) government employees, Harcourt-Brace Publishers, and Sea World.
